The germ gives wheat a lot of flavor and vitamins, but also contains healthy fats which make it perishable. Pastificio Morelli, a family run pasta business, has the 150 year artisanal expertise necessary to reintroduce the germ without compromising quality or shelf life, hanging their pasta by hand to slow dry in cool air over the course of 36 hours.

The resulting pasta possesses a richer, fuller version of top quality pasta’s usual aroma and flavor, reminding the diner that the noodles themselves can have a soul beyond what they are served with.

The Wheat Germ Pasta Trio contains three varieties of artisanal linguine. Pasta with Wheat Germ allows you to savor the purity of the germ’s taste. The Garlic & Basil and Red Chili varieties take this base and add complimentary flavors and stunning natural colors to dramatic effect.

Ingredients:
Wheat Germ Pasta: Durum wheat semolina (96.80%), wheat germ (3.20%).
Garlic & Basil Pasta: Durum wheat semolina, wheat germ, dehydrated garlic, dehydrated basil, natural garlic extract, natural basil extract, dehydrated spinach.
Red Chilli Pasta: Durum wheat semolina, wheat germ, red chilli, dehydrated beetroot.

Storage: Store wheat germ pasta in an air-tight container or bag kept in a cool, dry place.

Shelf Life: Up to two years unopened, several months once opened.

To prepare these pastas, bring a large pot of salted water to a boil, add the pasta, and cook until al dente (about 8-9 minutes). Drain off the water and pair them with your choice of sauce.

Peperoncino pasta pairs particularly well with meat sauces, but will work in any dish where its strong, spicy flavor will be welcome.

Garlic & basil pasta is great simply dressed with fine olive oil and parmesan cheese, but is also tasty with tomato-based sauces.

Plain wheat-germ linguine is extremely versatile, but simple, mild sauces will really allow the flavor of the wheat germ to sing. It’s tasty with melted or browned butter and herbs, or even just a little extra virgin olive oil.
