A relative of the kidney bean, the Swedish brown bean is an oval 1/4th inch bean that holds its shape in soups and stews better than many other varieties.
Dried brown beans are best stored in an air-tight container in a cool, dry place.
Swedish brown beans pair well (traditionally as a sweetened puree) with smoked pork and
game meats.
Basic Cooking Technique:
To prepare, soak these beans overnight in water. Rinse them off and put in a large pot just covering them with water. Boil them for three minutes before reducing the heat to low and simmering (skimming often) until tender. They swell up to three times their dry size when cooked.
