Spelt flour is often a good alternative to wheat flour for those who are allergic to wheat. While it is not glueten-free, it is easier to digest than wheat flour.
This spelt is certified organic and grown on a family farm on the Columbia Plateau of Eastern Washington which is known for its superior quality cereal grain production because of its arid climate and its fertile and mineral-rich soils.
Applications: Spelt flour can replace wheat flour in many recipes such as bread, cookies, cakes, muffins, pancakes, and waffles.
Tips: When baking bread, if substituting spelt flour for wheat flour, start by using only 75% as much liquid. Spelt has a unique protein structure, so its mixing and rising time is shorter than wheat’s. Because of spelt flour’s lower gluten content, you should not let it rise as high as regular wheat flour or it will loose its stability.
