Emmer (Farro) flour brings a sweet and full taste to baking, and is a wonderful alternative to durum wheat flour. Emmer is high in protein and low in gluten.

Tips: When baking bread, if substituting spelt flour for wheat flour, start by using only 75% as much liquid. Spelt has a unique protein structure, so its mixing and rising time is shorter than wheat’s. Because of spelt flour’s lower gluten content, you should not let it rise as high as regular wheat flour or it will loose its stability.
