These honey-dipped orange peel strips are known as Arabian Torrone (Torrone d’origine Araba) in Italy. Made with Sicilian orange peel, their flavor is superb: orange zest without the sour-sweet of the juice, plus a light honeyed finish. They have a firm, but not overly chewy texture.
Not overly sweet itself, Sicilian candied orange peel can be used in both sweet and savory applications (though it’s particularly well suited to baked goods) as well as cocktails.
It is produced by Antica Dolceria Bonajuto, which has been making artisanal chocolates and sweets in Modica, Sicily with meticulous care since 1880.
Store unopened candied orange peel in a cool, dry place (typically a cupboard or pantry). After opening, store the peel in the refrigerator.
Candied orange peel/Arabian torrone can be used as whole strips (typically as a garnish for dishes or cocktails), thinly sliced, chopped, or finely minced.
Use candied orange peel in baked goods, cheese plates, stirred into soft cheeses (cream cheese, mascarpone, ricotta, etc), added to sauces or in beverages.
Try pairing it with ingredients like dark chocolate (especially modica chocolate), dried mission figs, coffee, black tea, cranberries, dried apricots, cinnamon, cloves, allspice, nutmeg, star anise, nuts (especially hazelnuts, pine nuts, pecans or almonds), brandy, bourbon, mild cheese or cream.
It can be used in savory dishes too, especially those involving game meats, poultry, or roasted pork.
