This turtle meat is semi-boneless and comes from fresh water snapping
turtles. It is called ‘semi-boneless’ because it still has cartilage in
it. The flavor of turtle meat is both delicate and intense.
Keep turtle meat frozen until the day you're planning on cooking it.
