Dried scarlet runner beans are best stored in an air-tight container in a cool, dry place.
Scarlet runner beans can be substituted for pinto or
pink beans in almost any recipe. They excel in chili, stews, and soups…particularly in preparations spiced with
chili peppers.
Basic Cooking Technique:
Dry scarlet runner beans should be soaked overnight and rinsed prior to use. To cook on the stove, boil for three minutes, then reduce the heat and simmer (covered) until tender. They triple in size while cooking, so one cup raw will yield about three cups of cooked beans.
