Roe-on scallops are simply dayboat scallops that have been removed from their shells but have the roe still attached.
Bright orange scallop roe has a pronounced flavor evoking the sea, and is considered a delicacy by some.
Storage:
Store fresh roe-on scallops in your refrigerator. For longer storage, freeze them ((how to freeze better at home).
Store frozen roe-on scallops in your freezer until you're ready to use them.
Shelf Life:
Fresh - Approximately 2 days
Frozen - Up to nine months.
Scallop roe cooks at roughly the same rate as the rest of the scallop, allowing you to use these in most scallop recipes. Try lightly sautéing or searing in oil or butter with salt, pepper, and any other desired flavors. Scallops are generally served rare because they can become quite rubbery if overcooked.
Scallops are great in combination with garlic, citrus fruit, bacon, truffles, and wild mushrooms.
