Rolled emmer flakes (aka rolled farro) are a tasty alternative to traditional rolled oats.
Spelt is often sold as farro in specialty shops, but most Italian recipes calling for farro are actually expecting emmer, a far older crop which before being cultivated was gathered wild up to 17,000 years ago. Because both emmer and spelt are higher root-mass crops than conventional wheat, they draw up more of the soil’s nutritious vitamins, minerals, and antioxidants than wheat, storing them in their grain.
These farro flakes are rolled from emmer grain that is certified organic and grown on a family farm on the Columbia Plateau of Eastern Washington which is known for superior quality cereal grain production because of its arid climate and fertile, mineral-rich soils.

Applications: Rolled farro flakes can be used in place of rolled oats in homemade granola and baking. Try adding them to bread or cookies!
They can also be cooked similarly to oats in order to make emmer “oatmeal.” To cook, first stir flakes into boiling water (two parts emmer to three parts water). Reduce heat to low, stir, and cover the pot. Simmer for 5-10 minutes, stirring occasionally. Remove from heat and let sit covered for five minutes prior to serving. Try topping with fruit for an even more nutritious breakfast.
