Storage: Store raw pumpkin seeds in an air-tight container in a cool, dry place.
Shelf Life: 12 months or longer (under optimum conditions).

Use pumpkin seeds in snacks, salads, trail mixes, homemade granola and muesli, cookies, nougat, brittles (especially spiced brittles), muffins and other quick breads.
Use them as a substitute for mixed-in whole or chopped nuts (but not ground as a substitute for nut meals) or dried fruit in baked goods.
Toasting Pepitas:
To awaken even more of their flavor, lightly toast pumpkin seeds in a dry frying pan on the stove until just heated through and aromatic. Be sure to keep a close watch on them and jiggle the pan periodically to keep them from burning.
