Idaho | | Rainbow Trout (aka Steelhead Trout when sea-caught), is native to
northwestern America where it is found in open fresh water rather than
the streams its cousin the brown trout inhabits. These trout are dressed
but whole, allowing them to be broken down to fit numerous recipes or
prepared whole. |

Store rainbow trout in your refrigerator (covered) until you're ready to use them. For extended storage, freeze them individually and store them in your freezer in a sealed container with as much of the air pushed out as possible (packed in vacuum bags would be even better).

Rainbow trout are extremely versatile fish. They can be simply grilled whole and served with butter and lemon, or used in far more complex preparations including hollandaise sauce, braising in red wine, or poaching in court-bouillon. It can also be fried or baked en papillote (in a pouch of parchment paper or tin foil with aromatics). For an exciting table-side presentation, consider preparing trout in a salt crust.
