Rainbow Trout, identifiable by their multi-hued skin, is native to northwestern America. It spends its life in open, fresh water, unlike its cousin, Steelhead Trout, which venture out into the ocean and return to rivers to breed. These trout are farmed and sold dressed but whole, allowing them to be broken down to fit numerous recipes or prepared whole.

Store rainbow trout in your refrigerator (covered) until you're ready to use them. For extended storage, freeze them individually and store them in your freezer in a sealed container with as much of the air pushed out as possible (packed in vacuum bags would be even better).

Freezing Tips

Rainbow trout are extremely versatile fish. They can be grilled whole and served simply with butter and lemon or gussied up with hollandaise sauce. You also can pan-fry rainbow trout, braise it in red wine, poach it in court-bouillon, or bake it en papillote (in a pouch of parchment paper or tin foil with aromatics). For an exciting table-side presentation, consider preparing trout in a salt crust.
