Pacific Halibut is Swimming into Season

Pacific Halibut season has just opened. Caught off the coasts of Alaska, Canada, Washington and Russia, it’s fresh and shipped directly to the consumer’s doorstep.

“Just coming out of winter with limited seasonal items available, it’s very exciting to have access to freshly caught halibut,” said Justin Marx, CEO of Marxfoods.com. “The harvest has been reduced this year, but if we’re lucky, the season should extend through mid-November.”

Halibut has a firm, flaky texture and is very white in color, with a slightly sweet taste. Eaten fresh, it has a very clean flavor and requires minimal seasoning. Cooking methods are endless including broiling, smoking, baking, frying, and grilling. It’s a great fish to have as a main dish with fresh herbs or to use as an ingredient in fish tacos, bouillabaisse, curry or pasta.

“This season’s silver lining is Pacific Halibut,” said Katy Springer, General Manager. “Because halibut has a limited harvest and is not in danger of being over fished, you can feel good about eating it.”

An extremely lean fish, halibut makes a delicious low-fat meal. Fillets are available for $19 per pound. A serving size is about 6 ounces raw. Pacific Halibut is the largest fish of all the flatfish species, with the highest recorded weighing in at almost 500 lbs. More commonly, they weigh between 10 and 200 lbs.

Care is taken when halibut fishing. An individual vessel quota system has increased the availability of fresh halibut, as well as the quality of the fish.
