Pink beans (aka chili beans, mauve benas, habichuelas rosadas) are similar to the pinto bean, but rounder, and smaller. They have a slightly sweet flavor, thin skin, and a smooth yet meaty texture.
Dried pink beans are best stored in an air-tight container in a cool, dry place.
Pink beans can be used in any recipe calling for kidney beans, red beans or pinto beans. They’re a particularly good choice for cold bean salads, refried beans and chili.
Basic Cooking Technique:
To cook pink beans, first soak them in water overnight. Rinse the beans and put them in a pot with fresh water. Simmer (covered) until tender, then drain off any excess water.
