Actually a type of Pacific flounder rather than a true sole like Dover Sole, Petrale Sole is still prized for its subtle, sweet flavor and fine-textured yet firm flesh. It is also relatively low in fat, and is one of the most abundant flounders.
Store petrale sole fillets in your freezer until you're ready to use them, then thaw as many as you need. We do not recommend thawing and refreezing raw fish.
How to Defrost Food for Best Quality & Safety
Petrale Sole can be broiled, grilled, sautéed, or poached. When the meat becomes opaque, it is done. Petrale Sole pairs well with mushrooms, beurre blanc sauces, a variety of herbs (fennel, tarragon, parsley, chervil, etc) and dairy products.
