Ostrich is an extremely lean, very red meat. It is low in fat and cholesterol and high in protein. Ostrich has a delicious flavor that is quite similar to beef.
Ground ostrich combines the health benefits of poultry with the flavor and versatility of ground beef.
Applications: Use as you would ground beef, being careful because ostrich cooks very quickly. Ostrich burgers, ostrich meat balls, ostrich pasta sauces, ostrich lasagna, ostrich tacos, ostrich meatloaf, the sky’s the limit.
Recommended Ostrich Cooking Temps:
Rare - 135° Medium Rare - 140°-150° Medium - 140°-145° Medium Well - 160° Well Done - 165° and above
