Applications: Ostrich patties are a wonderful choice if you want to invigorate the standard beef burger. It should be prepared medium rare to rare due to the lack of intermuscular fat in the meat.

Rare - 135°
Medium Rare - 140°-150°
Medium - 140°-145°
Medium Well - 160°
Well Done - 165° and above
