New Mexico chilies (aka California chile, chile Colorado) are red Anaheim chilies that have been dried. They range from five to seven inches in length and are commonly found in Southwestern and Mexican red sauces. They possess relatively mild heat.
We also offer non-organic dried New Mexico peppers and pre-ground New Mexico chili powder in bulk.
Storage: Store organic New Mexico peppers in an air-tight container in a cool, dark cupboard.
Shelf Life: New Mexico chilies will retain their potency for at least a year, but likely much longer.
Dried New Mexico peppers can be ground into chili powder or reconstituted in boiling water. Use to add mild heat to soups, salsas, rice-dishes and sauces. They can also be used in fish or chicken marinades.
