Fine olive oil infused with the flavor and aroma of porcini mushrooms. This oil is used similarly to truffle oils as a finishing touch to just-cooked dishes. As soon as it is drizzled on to the warm food, this oil begins to release rich, earthy porcini essence.
Natural porcini oil should be stored in a cool, dry cupboard away from the sun.
Use a drizzle of porcini oil as the finishing touch to dishes. Its earthy, rich, umami flavor pairs well with dairy, cheese (especially
Parmigiano Reggiano), eggs (try it on omelettes!), roasted vegetables, pasta and rice dishes (especially risotto). You can also use it to turn up the volume on almost any mushroom dish.
To add even more complexity to your dish (if it won’t conflict with the other flavors) add a squeeze of fresh lemon juice at the same time as the oil.
