About Mt. Townsend Creamery: This cheese is a direct product of the Pacific Northwest landscape. Mt. Townsend sources only the best local milk from the North Olympic Peninsula – from small grass based dairies, that use no hormones, antibiotics, or chemical fertilizers.

Cirrus Cheese: Cirrus is a Pacific Northwest camembert. A smaller and creamier version of the classic Norman camembert, Cirrus is named after the thin white clouds that hang over the Olympic Mountains. It is ripened four weeks to an indulgent soft texture with a rich, buttery flavor.

Wine Pairings: Sparkling Wine, Pinot Gris, and Cabernet Sauvignon.

Made from pasteurized cow’s milk.

Seastack Cheese: Seastack is a soft ripened Pacific Northwest original. It is inspired by the gorgeous rock formations that dot the Pacific Northwest coast. Seastack is a mold-ripened, semi-lactic cow’s milk cheese that is the essence of slow food. It requires the best quality milk, the perfect environment, and plenty of time. It is coated in vegetable ash and salt before ripening, which gives it a mottled, wild look. Seastack is then ripened for two or three weeks to achieve a silky texture with intricate layers of flavor. Its mild, earthy flavor intensifies with time, becoming piquant as it ages.

Wine Pairings: Sparkling Wine, Viognier, Pinot Noir, and Cabernet Sauvignon.

Made from pasteurized cow’s milk.

Campfire Cheese: Campfire is an aged, smoked Jack cheese. This well balanced cheese is smoked with a blend of applewood and alder smoke.

Three 5.5oz pieces of Cirrus, two 8oz pieces of Seastack, two 11oz pieces of Campfire (Approx. 3.5lbs total).

Storage:

Store Mt. Townsend cheeses in your refrigerator.

Shelf Life:

Cirrus - up to 60 days. Seastack - up to 45 days. Campfire - up to 6 months (sealed).

Amazing cheese, ordered it on a whim, and was blown away by how good this cheese is. Probably the best camembert I've ever had, and the seastack cheese was simply amazing. Just the right bit of tang to a wonderful soft cheese!
