Though they look like the world’s smallest parsnips, these are actually tiny celery roots. Their appearance is not entirely misleading however, as they have a flavor that’s parsnip-esque but more mild.
Storage: Store miniature vegetables in your refrigerator in their plastic clamshell.
Shelf Life: Up to a month.
Micro parsley roots can be steamed or blanched for use as a garnish or added to soups and stews as an ingredient. Parsley root is often used in dishes from Eastern & Central Europe and matches well with flavors like thyme, other root vegetables (especially beets…try pairing them with
mini beets), cabbage, chicken,
horseradish & barley.
