Micro Tatsoi (aka spinach mustard, rosette bok choy) has tiny clover-like leaves that hide a cabbage flavor similar to micro bok choy, but with more spice. For a less potent, but similar flavor, try micro mizuna.
Applications: Use micro tatsoi as a seasoning garnish, or blend it with other microgreens in a micro-salad.
How to Store and Share: Tatsoi microgreens should be kept in their plastic clamshell in the fridge until you are ready to use them. They should last for about 5-7 days.
