Arugula has recently become one of the most popular salad greens in fine dining restaurants for its signature peppery flavor. Micro-arugula possesses this same flavor, but in a more subtle, crisp & clear form. Micro arugula leaves are also significantly more tender.
Applications: Micro-Arugula can be used to add a touch of flavor to almost any plate as a garnish, but it works exceptionally well as a micro-salad green. Flavor suggestions for micro-arugula salads include walnuts, blue cheeses like Maytag Blue or Point Reyes Blue, pecans, pine nuts, garlic, avocado, and Parmigiano Reggiano. Simple dressings like a lemon-vinaigrette will allow the flavor of the arugula to shine through.
How to Store and Share: Arugula microgreens should be kept in their plastic clamshell in the fridge until you are ready to use them. They should last for about 5-7 days.
