Panforte is a flat, dense cake created in Siena, Italy during the medieval era. Flavored with dried fruits, nuts, honey, citrus zests and a variety of spices, these cakes have a long shelf life and a rich, complex flavor that satisfies with only a tiny slice. Indeed, they are so nutrient and energy dense that they were used as travel rations by Italian soldiers during the Crusades.
Originally panfortes were heavily spiced with black pepper, and while pepper continues to be a common ingredient, this famous variety, the Panforte Margherita, marks the historical turning point from panfortes with lots of pepper to those with more complex flavors using a variety of spices.
Created in 1879 to honor Queen Margherita di Savoia’s visit to the city of Siena, Panforte Margherita remains to this day one of the most popular panforte varieties. It combines the bittersweet flavor of almonds with honey, spices, candied citron and orange, and has been dusted with a snow-white coating of powdered sugar.
This panforte di Siena is produced by Pasticceria Marabissi, a third generation family-run pastry business in Chianciano Terme (Province of Siena) that is considered the most prestigious producer of true Panforte di Siena in Italy. Marabissi is committed to making each of their panforte cakes by hand using traditional methods and the finest Italian ingredients. Their panforte has won many national awards.
Storage: Store panforte in a cool cupboard (whole panforte in original packaging, leftover portions in plastic wrap).
Shelf Life: Up to eighteen months.
Present Panforte Margherita with tea, coffee, or dessert wine as an elegant finish to a meal, take some on your next hike or camping trip as a delicious energy food, or serve it as a counterpoint to sharp cheeses.
In addition to the above traditional uses for panforte, it can also be cut into small cubes, or thinly sliced and baked until crisp (at 350F on parchment paper for about 10 minutes), for use as an ingredient.
Margherita panforte crosses the sweet/savory divide, and so while it's a great addition to desserts, it can also be used in salads or with fruit friendly meats like Kurobuta pork, venison, and wild boar.
As each of these panfortes is shelf stable for up to 18 months and elegantly hand wrapped in beautiful paper, they make spectacular food gifts that travel well.
