Maple sugar is made by boiling the same sugar maple tree sap used to make maple syrup until almost all moisture has evaporated. This process is difficult because of the careful temperature control required to keep the sugar from burning. Maple sugar possesses a strong maple flavor and potent sweetness. It has been described as tasting twice as sweet as conventional cane sugar.
Applications: Maple sugar is a great addition to rubs, marinades, hot drinks and baked goods. It can also be used to make maple candy.
