Black lumpfish caviar is a Scandinavian delicacy. Naturally pink, these eggs have been dyed a dark black, giving them a striking appearance. They are small (a little larger than masago capelin roe) and have a firm, crunchy texture and a strong earthy, salty-fish flavor.
Storage: Unopened lumpfish roe is shelf stable (pasteurized) and can be stored at room temperature.
Shelf Life: Up to a year unopened, a few days once opened.
Lumpfish roe is often used as a garnish for salads & soups (as you would use sturgeon caviar). It is also sometimes mixed with or used as a garnish for whipped/mashed starches, such as potatoes, celery root, and other root vegetables.
