Periwinkles (aka winkles, crickles) are tiny mollusks that, while found on both ends of the Atlantic, are mostly consumed on the European side. They are abundant, low on the food chain, and are a high-protein, low-fat food.
Storage: Store live periwinkles in an open container in your fridge, covered with a damp cloth.
Shelf Life: Up to three days in their shells, 1-2 days shucked.
Like clams, periwinkles tend to keep their front doors shut while alive, so you should seriously consider throwing out any that leave it open prior to being cooked. Periwinkles are best served simply. They are often boiled (about three minutes), salted, and served with a pin to fish them out of their shells. Remove their doors prior to serving to make it easier on your guests. They can also be cooked shucked.
