Atlantic oysters have a muskier flavor than Pacific oyster varieties.  We prefer the cleaner flavor of Pacific oysters (Pacifics, Virginicas, Kumamotos, Olympias & Kusshis) and recommend them, but if you grew up on Atlantic oysters and don’t want to switch, this sampler is for you.

The sampler will contain one dozen each of three of following six varieties (depending on availability…contact us to find out which are shipping now).

Blue Point Oysters (Connecticut) – 3”-4” oysters with a meaty, briny flavor.
Carraquette Oysters (New Brunswick, Canada) – 1 ¾”-2 ¼” with dark meat & mineral finish.
Cotuit Oysters (Massachusetts) – Roughly 3” with a briny, crisp flavor & creamy finish.
Flying Point Oysters (Maine) – Roughly 4” with a salty-sweet flavor & musky finish.
Quonset Point Oysters (Rhode Island) – 3”-3 ½” with deep-cups and a mild, sweet finish.
Raspberry Point Oysters (Prince Edward Island, Canada) – 3”-3 ½” & very sweet.

These oysters have been stored in a high tech refrigerated flowing seawater system post-harvest that keeps them fresher, tastier, and alive longer.  While in this wet holding area, they naturally clean themselves of sand, bacteria and grit by filtering the clean seawater.

Storage:

If you will be eating your Atlantic oysters soon after arrival, you can simply store them in a bowl in your refrigerator covered with a damp towel.
