The 2” hindshank osso bucco is the perfect portion size for one person. The shank bone in hindshank osso bucco is circular and thicker than foreshank osso bucco’s oval-shaped bone. There is a comparable thickness of meat surrounding the shank bone in both the hindshank and foreshank. So, a hindshank osso bucco will occupy more plate space and will appear as a larger portion than a foreshank cut to the same thickness. All Le Québécois osso bucco is center cut, faciliting greater consistency than most osso bucco products.
