Lavender Flower Crystals™ can be used to garnish dishes, decorate frosted cake or cupcakes and as a finishing ingredient for meats or poultry (as long as their sweetness works with the rest of the dish). Try them over ice cream, fruit dishes, custard, etc.
For a different look and texture, these crystals can be crushed with a spice grinder, mortar & pestle or by pressing them between two spoons in order to create smaller crystals or a fine powder (which will have a lighter color). Once in smaller particles they can be used to rim cocktail glasses.
Lavender works well with a wide variety of fruits – try pairing it with orange, stone fruit (plums, peaches, etc), figs and berries. Other lavender-friendly flavors include goat cheese, almonds, walnuts and mint.
You may be able to pair these crystals with lamb, game birds (especially duck), chicken, rabbit and beef in savory dishes, depending on the other flavors present.
