Yuzu Juice has an extremely complex, slightly flowery flavor that is difficult to describe but is something like a blend of orange/tangerine, lemon and grapefruit. It is slightly less acidic than lemon juice.
Tamari Soy Sauce is a rich, very dark, and slightly thicker soy sauce traditionally served with sashimi. Its flavor is salty, full of umami, and reminiscent of dark miso.
White Soy Sauce has a pale, almost clear gold color and a clean, subtle soy sauce flavor. Chefs love it for use in sauces, dressings and marinades.
Matsutake Mushrooms are some of the most highly prized mushrooms in Japan. They have a unique, piney flavor and a meaty texture.
Ingredients:
Yuzu Juice: 100% Yuzu Juice.
Tamari Soy Sauce: Water, Soybeans, Sea Salt, Fermented Alcohol.
White Soy Sauce: Water, Wheat, Sea Salt, Fermented Alcohol, Soybeans.
*No Chemical Ingredients.
Storage: Store unopened yuzu juice, tamari and white soy sauce in a cool, dark cupboard. After opening, the bottles should be kept in your refrigerator. Store dried mushrooms in a cool, dry cupboard.
Shelf Life:
Yuzu Juice: Up to one year unopened, four months opened.
Soy Sauces: Up to a year.
Matsutake Mushrooms: Dried mushrooms will retain their flavor for at least a year, but likely far longer.
Yuzu Juice is very strong and acidic, so a little goes a long way. It can be used similarly to or as a substitute for lemon juice (with the quantity balanced to taste) in most recipes. Try adding it to ice creams, sorbets, tea (hot or iced), gin or vodka cocktails, ceviche, sauces,
vinaigrettes (try a 5 to 1 olive oil to yuzu juice ratio), other salad dressings, pound cakes & other baked goods.

White Soy Sauce excels when paired with seafood vegetables, and tofu. Its strength is in its subtlety and adaptability. It’s a great way to add soy flavor to dishes without darkening their color much or overpowering other flavors.
Tamari Soy Sauce’s traditional use is as a dipping sauce for fine sashimi. It can also be used in marinades, as a seasoning for sautéed or grilled veggies, or as an ingredient in other dishes.
