Panforte is a flat, dense cake originally created in Siena, Italy during the medieval era. Flavored with dried fruits, nuts, honey, citrus zests and a variety of spices, these cakes have a long shelf life and a rich, complex flavor that satisfies with only a tiny slice. Indeed, they are so nutrient and energy dense that they were the preferred travel food of Italian soldiers during the Crusades.

These panfortes di Siena are produced by Pasticceria Marabissi, a third generation family-run pastry business in Chianciano Terme (Province of Siena) that is considered the most prestigious producer of true Panforte di Siena in Italy. Marabissi is committed to making each of their panforte cakes by hand using traditional methods and the finest Italian ingredients. Their panforte has won many national awards.
Note: Under the outer packaging, the bottoms of panforte are traditionally wrapped in wafer paper (aka "rice paper" although not always made from rice) to keep them from sticking. This does not need to be pulled off of the cake prior to consumption…it is edible!
Ingredients:
Fig & Walnut: Dried figs 30%, walnuts 30%, sugar, flour, honey, spices (cinnamon, nutmeg).
Margherita: Almonds, sugar, candied citron, candied orange, flour, honey, spices, starch wafer, natural flavouring.
Chocolate:
Panforte: 27% almonds, sugar, inverted sugar, hazelnuts 10,5% candied fruit (orange peel, citron peel, cherries, glucose, sugar, acidifying agent : citric acid), wheat flour, honey, cocoa powder, spices (cinnamon, nutmeg) starch wafer 6%.
Chocolate Glaze: sugar, cocoa paste, cocoa, cocoa butter, flavouring, cocoa min. 54%, emulsifier : lecitin.
Panforte can be served as dessert with tea, coffee, or dessert wine, or used as an energy boosting, nutrient rich snack. Fig and Walnut panforte is a great addition to cheese platters with goat or sheep milk cheeses.
In addition to the above traditional uses for panforte, both the fig & walnut and margherita varieties can also be cut into small cubes or thinly sliced, and baked until crisp (at 350F on parchment paper for about 10 minutes), for use as an ingredient.
As these panfortes are shelf stable for up to 18 months and elegantly hand wrapped in beautiful paper, they make spectacular food gifts that travel well.
