Wild Hedgehog Mushrooms

Though they’re not as well known as chanterelles or morels, hedgehog mushrooms (aka wood hedgehogs, sweet tooth mushrooms) are delicious wild mushrooms that should not be overlooked. Hand-foraged in the Pacific Northwest, wild hedgehog mushrooms have a firm texture and nutty, buttery flavor. They’re delicious sautéed with butter & garlic.
