Ground alpaca can be used in burgers, sauces, tacos and other ground meat recipes as a healthier alternative to conventional ground beef.
Alpacas are small llama-esque animals originally from the Andes Mountains of South America. They’ve been domesticated for over 12,000 years for their fiber (similar to wool) and their meat. These alpacas are pasture-raised in the upper midwest US (with supplemental grain in the winter).
Alpaca meat is mild and slightly sweet with a clean finish (often compared to lean, mild lamb or pork). It is high protein but very low in both fat and cholesterol. In fact, it is lower in cholesterol (on average) than even venison and rabbit.
Store ground alpaca meat in your freezer until you’re ready to use it, then thaw as much as you need.
RECIPES & TIPS
Ground alpaca can be used similarly to 95% lean ground beef or pork in recipes. Use it to make tacos, meat sauces, etc.
Ground alpaca will cook more quickly than higher fat ground meats. For some recipes (sausages, meatballs, meatloaf, etc) you may need to add other, fattier ground meats or additional fat to the blend in order to keep it from drying out.
