The striploin comes from between the ribs and the upper hip (or the sirloin.) This cut of meat is very flavorful and it is generally frowned upon if you marinate it. Applications: You can cut a striploin into several strip steaks, or roast it whole. With all grass-fed beef, you will want to cook it at a lower temperature and for a shorter amount of time than conventional beef to avoid toughness. Be careful not to overcook this cut because it could become grainy.
