Chipotle chilies (aka chipotle moritas) are jalapeno chilies that have been dried and smoked. These morita chilies have a unique, medium hot, smoky flavor which is popular in many southwestern dishes.
These dried chipotle chilies have been processed into very small pieces that tend to average about 2mm or slightly above in diameter. Each container includes some chipotle seeds, which are where a large part of their heat is stored.
Storage: Store granulated chilies, chile pieces, and chile flakes in air-tight containers in cool, dry cupboards.
Shelf Life: Dried chile pieces will maintain their full flavor for at least twelve months.
Chipotle granules can be used fresh from the package in soups, braises and other recipes that will rehydrate them during the cooking process. They take less time to rehydrate than larger chile pieces or whole chiles, so the dishes need not cook long. Alternatively, they can be rehydrated prior to use (

Use chipotles in enchilada sauces, chili, stews, barbecue ribs, and corn bread. Their smoky quality combines well with poultry, meats and fall squash.
