Veal spare ribs are a richly flavorful braising cut used in barbeque, Chinese, and traditional Jewish dishes. These are St. Louis style spare ribs, meaning that the surrounding bones and cartilage have been removed to make them easier to eat (and so you’re paying for less bone). They are sold as whole racks.
Grain-fed veal is not the same as ‘pale veal.’ Its natural rose color comes from a varied, nutritious diet, including grains, which give the meat a more robust flavor for two reasons: First, grains give the meat subtle marbling that infuses the meat with flavor and tenderness that veal is known for. Second, grain-fed veal contains more iron and other minerals which add to the delicious flavor and the animal’s health.

Store veal spare ribs in your freezer until you're ready to use them, then remove and thaw as many racks as you need.

Veal spareribs are perhaps most often braised, and served with the braising liquid as a sauce. However, they can also be braised in a lighter liquid (like stock) and then coated with BBQ sauce before being briefly grilled, or used in a host of other rib recipes.
