This unusual “gigli” shape is a curving almost-tube with a fluted ruffle. When paired with rice flour’s pale white color, it results in a delicate pasta that is beautiful presented with lighter oil based sauces like pesto.
Store rice pasta in a closed box or bag in a cool, dry cupboard.
Rice gigli should be boiled in salted water until al dente (roughly five minutes). Once cooked it can be tossed in warm sauce & served immediately, or rinsed with cold water to stop the cooking process and used in gluten-free pasta salads or reheated later.
While rice pasta can be used with any sauce, it works particularly well in lighter dishes, such as pasta primavera & seafood pasta dishes.
