Geoduck clams (aka king clams, mirugai) are the largest species of burrowing clam in the world. Their long “necks” can be 7 to 9 inches in length, hence their Chinese name: elephant trunk clams. They are delicacies, particularly in Asia, because of their slightly crunchy texture and flavor. Some cultures believe them to be aphrodisiacs as well.
