Medallions are small pieces of meat that are easy to sauté, grill, roast, or cook using other methods. They’re convenient, adaptable, tasty, and a great way to experiment with exotic game meats. This sampler gives you four different varieties to enjoy.

Each Sampler Contains:
Sixteen 4oz Wild Boar Medallions (in 1lb packs)
Sixteen 4oz Elk Medallions (in 1lb packs)
Sixteen 3oz Venison Medallions (in 1lb packs)
Sixteen 4oz Kangaroo Medallions (in 1lb packs)

All of the medallions in this sampler are from leg cuts.


Store game meat medallions in your freezer until you’re ready to use them, then thaw them completely before cooking.

Thawing tips


Game meat medallions can be roasted, grilled, sautéed, etc.  Because game meats are quite lean, they will likely cook more quickly than beef.

A single medallion can be a good appetizer portion or part of a light meal, two provides a more robust serving.

To add extra flavor to medallions, marinate them before cooking.  Wild boar medallions can also be brined for extra moisture & flavor.

While each of these meats has its own flavor profile, classic game meat pairings like berries (especially wild huckleberries), bay leaves, thyme, wine, garlic, onions, and juniper berries will work well with all of them.
