Dragon tongue beans are a gorgeous heirloom Dutch wax bean variety that grows in long, broad yellow pods with striking purple streaks and white beans inside. They can be eaten whole as whole pods (like green beans) and have a starchy, sweet flavor. They’re delicious raw or cooked, but the purple streaks will fade during cooking, so you’ll get the best presentation serving them raw.
