Thawing Tips
Shelf Life: Up to 36 weeks frozen, 10-14 days thawed.
En croute mousses & pates should be sliced with a sharp knife and served as an hors d’oeuvre or appetizer. Because each slice will include some of the all-butter puff pastry, crackers or toast may not be necessary.
Traditional accompaniments that help cut the richness of mousses and pates while accentuating their flavors include cornichons or gherkins, olives, and coarsely ground French mustards.
