Cascabel chilies (aka rattle chilies, little bell chilies) are mild chilies that are round and have several loose seeds that rattle loudly when the chilies are shaken.
Storage: Store cascabel peppers in an air-tight container in a cool, dark cupboard.
Shelf Life: Cascabels will retain their flavor for at least a year, but likely much longer.
Cascabel chilies can be ground into chili powder or reconstituted in boiling water. Their flavor works well in soups and other dishes, but their skin is leathery and so they should be pureed or steeped and then removed prior to the dish being served.
