Origin: Peru

Aji Amarillo (aka yellow chile, Peruvian chile) is the chile most commonly found in Peru. Despite being called the yellow chile, they are actually orange when ready for consumption.

These aji amarillos are on the milder side for the variety.  Our organic aji amarillo chilies tend to be hotter.

We also offer pre-ground aji amarillo chili powder in bulk.

Storage: Store aji amarillo chili peppers in an air-tight container in a cool, dark cupboard.

Shelf Life: Aji amarillos will retain their potency for at least a year, but likely much longer.

Reconstitute aji amarillo chilies and add to soups, sauces, and other dishes. Chop them up, toast them (optional) slightly and add them still dried. Grind them into chili powder using a spice grinder or blender for use as is or as part of your own spice blends. Aji Amarillo chilies are indispensable in Peruvian cooking.
