Aji Amarillo (aka yellow chile, Peruvian chile) is the chile most commonly found in Peru. Despite being called the yellow chile, they are actually orange when ready for consumption. These dried Aji Amarillo Chilies have had their stems removed for your convenience.

Origin: Peru
Applications: Reconstitute these chilies and add to soups, sauces, and other dishes. Chop them up, toast them (optional) slightly and add them still dried. Grind them into chili powder using a spice grinder or blender for use as is or as part of your own spice blends. Aji Amarillo chilies are indispensable in Peruvian cooking.
