Enjoy cooked cracked spelt cereal as a delicious and healthy breakfast, salad, or pilaf. Spelt is believed to increase energy and, although it contains gluten, it can be a safe alternative to wheat for people with certain wheat allergies.
Because both emmer and spelt are higher root-mass crops than conventional wheat, they draw up more of the soil’s nutritious vitamins, minerals, and antioxidants than wheat, storing them in their grain. Spelt is particularly high in zinc, an essential nutrient tied to better immune system functioning, and demonstrates sustained release of energy as measured on the glycemic index.
This spelt cereal comes from grains that are grown on a family farm on the Columbia Plateau of Eastern Washington which is known for superior quality cereal grain production because of its arid climate and fertile, mineral-rich soils.
We also sell whole spelt berries, spelt flour, and rolled spelt flakes.
Store cracked emmer in an air-tight container in a cool, dry place.
Cracked spelt can be eaten as a cereal, as a pilaf, or as part of a grain salad. It also adds texture and nutrients when kneaded into bread dough.
To cook, stir cracked spelt into boiling water (1 part cereal to 3 parts water). Immediately reduce the heat to low and simmer for 8-12 minutes. Remove from heat and let stand covered for 5 minutes before serving. Try topping with fruit for an even more nutritious breakfast.
