Christmas lima beans (aka speckled lima beans, butter beans, calico beans, fagioli del papa, chestnut lima) are an heirloom relative of the common lima that keeps its beautiful speckled appearance even after being cooked, making them a good way to make lima bean dishes more visually interesting. They posses a hearty, chestnut-like flavor and a buttery texture.
Dried Christmas lima beans are best stored in an air-tight container in a cool, dry place.
Christmas lima beans can be added to soups, stews, curries and casseroles…mixed with corn to make succotash, or used in pasta or bean salads. They pair particularly well with the intense flavors of
wild mushrooms.
Basic Cooking Technique:
Prior to cooking, dry Christmas lima beans should be soaked in water for three to eight hours (ideally overnight) and then rinsed.
To cook on the stove top, cover the soaked & rinsed beans with about an inch of water. Bring the water to a boil, then immediately reduce the heat to a simmer. Cover the pot and let cook until the beans are tender. Each cup of raw Christmas lima beans will yield about 2 ¼ cups of cooked beans.
