Chicken of the Woods mushrooms (aka sulfur shelf mushrooms, chicken mushrooms, chicken fungus, laetiporus) are a yellow to bright orange shelf mushroom variety with a lemony chicken-like flavor and a great texture that can be either succulent or crisp.
Storage: Store Chicken of the Woods mushrooms in your refrigerator wrapped in a paper bag. For long term storage, first sauté them, then freeze.

Chicken of the woods mushrooms can be sautéed, baked, grilled, added to soups and omelets or even deep fried. People often pair them with chicken or chicken-friendly flavors because they often taste chicken-like themselves. They work particularly well with dairy ingredients (cream, eggs, cheese and milk).
Because chicken of the woods’ can give up most of their moisture during the cooking process, marinating them before grilling or finishing sautéed dishes by deglazing with a flavorful liquid (cream, milk, white wine, chicken stock, vegetable stock, etc). is highly recommended to ensure a tender, juicy result lands on your plate.
These wild mushrooms are also delicious in alfredo sauce with pasta or tossed in béchamel for use as a steak topping.
Before cooking, clean them gently with a damp paper towel to remove dirt. Do not soak them.
