Antelope medallions can be grilled, roasted, butterflied & stuffed, cut up for sauteed or stir fried dishes, etc. They’re adaptable to a wide variety of dry-heat cooking methods & recipes.
Antelope is much leaner than conventional meats like beef, and is thus likely to cook faster.
Like venison, antelope pairs well with wine (particularly red wine), juniper berries, and fruit.
