Found in both Chinese five spice powder and garam masala, star anise (grown on a Chinese evergreen tree) is an important ingredient in many of the cuisines of south and central Asia. Though it contains the same essential oils found in anise seed (giving it a somewhat similar licorice flavor), star anise is actually a different spice and contains those oils in higher concentrations.
Applications: Star anise can be used either whole and then removed prior to serving or freshly ground. Use to season proteins (especially duck), hot beverages, and desserts. Try steeping star anise in milk that is to be turned into a custard like crème brulee.
How to Store and Share: Store spices in opaque air-tight containers away from moisture. If grinding, do so just prior to use as pre-ground spices lose flavor and aroma over time.
