Lavender buds contain essential oils that are both flavorful and intensely aromatic. They are prized for their calming scent and are used in cakes, cookies, and sometimes even drinks.
Applications: Add lavender buds to sea salt to create a wonderful seasoning for fish (particularly salmon). Dust chicken and game birds with lavender prior to cooking. Lavender pairs well with sheep’s or goat’s milk cheeses.
When baking, add to scones or use (sparingly) to decorate cakes. Wrap some lavender in a plastic bag with granulated sugar, removing after several weeks once the sugar has absorbed the scent to create lavender sugar (this trick can also be performed with vanilla beans).
For beverages, add to your favorite tea prior to steeping or freeze lavender buds in ice cubes to flavor and garnish cold drinks.
Lavender buds can also be used to scent baths.
Warning: Some people are allergic to lavender and should avoid coming into contact with it. Women who are pregnant or breastfeeding should not ingest lavender buds.
How to Store and Share: Store spices in opaque air-tight containers away from moisture.
