Medium-long grain carnaroli rice is an excellent choice for making risotto. Its grains hold their shape better during the slow cooking process (due to high quantities of amylose) and it offers liquid absorption and starch release superior to Arborio rice.
Grown in Italy, this carnaroli is top quality, consisting of carefully selected whole (unchipped) grains of rice. Their brilliant white color is the result of being expertly polished (pearled) rather than any sort of chemical bleaching. This process also leaves more of the grains’ natural starch content intact for an even creamier risotto. It carries the USDA Organic seal, and has been certified organic by BioAgriCert S.r.l. in Europe.
Applications: For tips on making risotto, read How to Make Risotto and check out other risotto recipes in our rice recipe collection. Carnaroli rice also makes great rice puddings!
Classic risotto pairings include fine seafood, parmigiano reggiano cheese, and fresh truffles or truffle oil.
How to Store and Share: Store Italian carnaroli rice in a cool, dry place in a sealed container. Though it will last longer, you’ll enjoy it at its best by consuming within a month of opening.
