Most people use the well known Arborio rice when making risotto, however using Carnaroli rice will result in a better dish. Looking like a longer-grain Arborio, Carnaroli naturally contains more starch and amylose. The higher amylose allows it to hold its shape better during the slow risotto cooking process, and the higher starch content results in a creamier risotto.
Applications: This rice’s ability to hold large amounts of liquid makes it ideal for making risotto. Because surface starch is essential to a good risotto, please do not wash this rice prior to cooking with it. Its high starch content also makes it perfect for rice puddings.
